
Square steamed pastry is a famous local snack. In the year 1943, Wang Yuqing, a pastry master in “Liu Fang Zhai” food shop in Chong’an Temple, introduced and refined a kind of square steamed pastry from Huzhou. A specially made wooden model is used to make this new square cake. Put rice flour into the model, add fresh minced meet, sweetened red beam paste or vegetable lard, and stream it in streaming basket, then the square steamed pastries are ready to serve. The pastry is white, soft, rich in fillings and with a typical flavor agreeing with people living to the south of the Yangtze River Region.
